Zucchini Fritters - The Hearty Vegetable


Serves 4-6

-3 medium-sized zucchini and/or patty pan squash
-5 oz. cheddar cheese
-1 egg, lightly beaten
-¼ to ½ Cup all purpose flour
-¼ tsp. baking powder
-2-3 green onions, chopped (or one white or yellow onion)
-Salt and pepper to taste
-Greek yogurt/sour cream and hot sauce (optional)

Use a food processor with a shredding attachment or a box grater for the shredding in this recipe.
-Shred the cheddar cheese and set aside
-Shred the zucchini and/or patty pan squash, place in a fine mesh bag or clean kitchen towel, and squeeze out as much liquid as possible. Discard the liquid or reserve for another purpose.
-In a small bowl, combine dry ingredients together.
-In a large bowl, combine the zucchini/patty pan squash, cheddar cheese, egg, flour mixture, onions, salt and pepper to taste.
-Heat a skillet over medium to medium-high heat. Spray with non-stick cooking spray.
-Use two soup spoons (or a an ice cream scooper) to form heaping tablespoons of the batter into patties.
-Cook patties on the skillet until golden brown, about three minutes per side.
-Serve hot with Greek yogurt/sour cream and hot sauce
