Tomato Vinaigrette - The Hearty Vegetable


Makes about 8 oz. of dressing

-1 Heaping cup cherry or grape tomatoes, roughly chopped
-1-2 Tbs. extra virgin olive oil
-1 ½ tsps. red wine vinegar
-¼ tsp. Dijon mustard
-Pinch of celery salt (optional)
-Basil, thinly sliced (optional)
-Salt and pepper

-In a medium-sized jar with a lid, add tomatoes, olive oil, red wine vinegar, celery salt, Dijon mustard, salt and pepper to taste.
-Seal the jar and shake to combine.
-Add more olive oil if the dressing looks too thin. Seal and shake.
-Serve over salad, tossed with pasta, or stirred into goat cheese and spread on a cracker.
